These fabulous recipes are uncomplicated and it is easy to make substitutions if you are out of something. At first I was put off by the cream in a number of recipes, but then I noticed that it is often a very small amount of cream, a half cup or less in most cases. I am trying to weed out my loose recipes copied from here and there, but this book makes my resolution difficult. We tried at least six recipes and loved them all. Pasta and Green Bean Salad with Lemon Tarragon, Salisbury Steak with Butter Merlot Sauce, and Ricotta Lemon Poppy Muffins are keepers.
